Traditional Shortbread

Serves 10

125g butter

60g caster sugar

125g plain flour

60g rice flour

Gently cream butter and sugar until just combined. Add sifted plain and rice flour and mix into a firm dough. Divide into 2.

Roll out to the desired thickness.

Bake at 180 degrees for 10-15 minutes until a pale straw colour. Be careful not to overbake. Cool on trays.

Variations:

Add finely grated orange rind

Add finely chopped rosemary

Add coarsely chopped macadamia nuts

Add small chocolate chips

Dip half in melted chocolate
