Well I must say, these came together just beautifully. You can't beat a sausage roll with tomato sauce but adding bacon just moves it to another level. Easy to make, moist and scrumptious!
Makes about 20
1 brown onion diced
2 cloves garlic, crushed
5 spring onions, finely chopped
3 sprigs thyme
1 long red chilli, finely chopped
10 rashers of bacon, diced
500g chicken mince
2 tbs breadcrumbs
puff pasty sheets (approx. 3)
In a frypan, cook off the onion and garlic with a little oil until onion is translucent and softened. Add the spring onions, chilli, bacon and thyme. Cook for approx. 5 minutes.
Remove from heat and place in a bowl to slightly cool.
Lay the pastry on a flat working surface and run mixture down the centre in a log shape. Roll the pastry over the mixture and cut into sausage roll sized pieces.
Line a baking tray with foil and baking paper. Place sausage rolls on top and bake in a 180 degree celcius oven for approx. 25-30 minutes or until brown and cooked through.
Serve with barbecue or sweet chilli sauce.
