These delicious mini burritos are the perfect party food. Seasoned meat with refried beans and cheese.
Could party food be any simpler? I was looking at party food that would be quick and easy and ideal for small finger food you can eat in two bites.
I love so many things about these. They are so cute and small. They freeze well and they can be made a couple of days ahead of the party, as long as you keep little hands away.
Begin by frying off the mince with a bit of taco seasoning. Add refried beans, salsa and grated cheese. How much simpler could that be?
Grab a packet of mini burritos (regular tortillas) and cut into four through the centre.
I found the best way is to place the meat mixture in the centre, with the pointed end closer to you. Begin rolling from the small end working up to the rounded end.
The result will be perfect little burritos. Place them on a baking tray and bake them at 180 degrees celcius until warm. If you wish to serve them at a later time, place them in the refrigerator. Once warmed, top them with a blob of sour cream, salsa, guacamole and cheese. These toppers can be placed in bowls ready for your guests to help themselves.
Incy Wincy Burritos
Makes approx 60
1 kg good quality beef mince
2 small onions, finely diced
3 packets Old El Paso taco seasoning mix
6 tbsp water
3 cans Old El Paso refried beans
1 1/2 cups salsa
3 cups grated tasty cheese
2 packets flour tortillas (8 tortillas, 8 inch)
melted butter for basting
Toppings: sour cream, guacamole, salsa, cheese
Preheat oven to 180 degrees celcius. In a large frypan, brown off beef and onion until no longer pink. Add the taco seasoning and water. Stir well and cook for a couple of minutes. Remove from heat. Add refried beans, salsa and cheese. If you like a spicer meat mix - add more salsa.
Quarter the tortillas making 4 wedges from each tortilla. Spoon 2 tbsp of the mixture onto the centre of the tortilla. Fold the sides in and roll up. Place on a baking tray and bake until warmed through, or place in refrigerator if preparing early until serving time.
Brush with melted butter and bake 10-15 minutes or until burritos are warm. Add your favourite toppings and enjoy.
